Detoxifying Spinach Avocado Soup

An avocado a day keeps the weight away (and wrinkles! and illness! and cognitive decline!). This highly nutritious raw soup is perfect for before, during, or after a juice cleanse! 

INGREDIENTS:

  • 1 avocado pitted and skin removed
  • 2 cups fresh baby spinach
  • 1 cucumber peeled and diced
  • 1 green bell pepper
  • ¼ cup extra virgin olive oil
  • 1 lemon, juiced
  • 2 cups of water
  • 1 tsp. Himalayan salt
  • 1 tsp. Fresh black pepper

DIRECTIONS:

Combine all ingredients in blender and puree until smooth. Pour into bowl and garnish with your favorite superfoods like microgreens, fresh herbs, hemp seeds, extra virgin olive oil or more fresh avocado.
