I never understood the kale fad. I mean, people are obsessed with kale. Don't get me wrong-- I eat lots of greens and get that they are good for me and give me energy and all that jazz, but kale? It's kinda rough and bitter and not rave-worthy. UNTIL... I learned how to properly prepare it!
Kale Salad Ingredients:
- Kale (2 handfuls)
- 1/2- 1 lemon
- 1 T olive oil
- 1/2 avocado
- Dash of sea salt
You need to massage it-- that's right, massage it. Before you massage it you need to add some lemon and sea salt (which will cut through the bitterness), and olive oil and avocado (which will coat it in a creamy dressing). Then you stick your hands in, and crunch that kale until it softens up, sweetens up, and turns bright green! It's like magic-- for adults.
From there you can add the works. Some of my favorites are dried cranberries and sunflower seeds OR cherry tomatoes and nutritional yeast (makes it taste cheesy). Give it a go!
Try making this in bigger batches-- it stays good for a few days with many thanks to the lemon.
