RECIPE: What's Better Than Ice Cream?

Hi Healthy Peeps!

When I first went raw, I remember being nervous about “giving up” certain foods like pasta, pizza, and ice cream (vanilla, of course).  What I DIDN’T realize was how AMAZING I would feel when I chose not to eat them anymore.  As a result, I quickly learned to be creative so that I could still enjoy my favie foods but reap all the same health benefits while doing it.  Enter the scene: Banana Ice Cream!

My traditional ice cream is just frozen RIPE bananas , blended in a high speed blender or food processor using the “S” blade.  You can make simple variations of that by adding a little vanilla extract, cinnamon, or cocoa powder.  My very FAVORITE variation, however, is a super sweet, super pink treat… Watermelon Ice Cream!

Here’s the recipe (only two ingredients!):

Watermelon Ice Cream

  • 1/3 part fresh watermelon
  • 2/3 part frozen bananas

Mix ingredients in a high speed blender or food processor with the S-blade. Blend until smooth and creamy. (Add no additional liquid)  Enjoy!

You can use any fruit to change-up the flavor, if you’d like.  I’ve successfully used blueberries, strawberries, cherries, pineapple, mango, cantaloupe, and many others.  The main thing to remember, though, is that the frozen bananas need to be the ice cream base, otherwise you will end up with a sorbet or Italian ice consistency (which are obviously fine and dandy and also delectable in their own right…just not quite ice cream-y like this recipe).

But…you know my motto by now.  All you have to do to live that healthier lifestyle is just make the best choices you can in the moment…so if you’re banana-free, sorbet it will be!

Until next week! - Lisa
