Mexican Taco Salad
Ingredients:
- Romaine lettuce, shredded
- Chopped tomato
- Sliced scallions
- Corn (fresh off the cob is best)
- Diced red bell pepper
- ⅓ c. Black beans, rinsed and drained
- Fresh lime
- 1-2 Veggie Burgers
Direction:
- Assemble all salad ingredients.
- Crumble veggie burgers into a frying pan with 2 Tb water.
- Season to taste with sea salt, onion powder, garlic powder, cumin, & cayenne pepper.
- Cook on low-medium heat and gently mix occasionally until warmed through.
- Top your salad with your veggie burger taco “meat”.
- Squeeze fresh lime over salad and sprinkle with sea salt.
