RECIPES: Raw Zoodles 3 Ways

Pasta on a juice cleanse?!?

With Raw Generation juice cleanses, you can incorporate raw, plant-based foods if you feel that you need a little something extra. Whether you’re on a juice cleanse, or you’re looking for a healthy replacement for ordinary pasta, raw zoodles (a.k.a. zucchini noodles) are a deliciously versatile option! All you need to transform your zucchini into noodles is a spiralizer. 

In honor of Gluten-Free Diet Awareness Month, here are three 100% plant-based and raw ways to serve up zoodles: Raw Marinara, Raw Pesto, and Cashew Alfredo.

Simply spiralize your zoodles, blend up your sauce of choice, combine, and enjoy!

To make zoodles:

Ingredients:

  • 1 large zucchini 

You’ll need:

  • A spiralizer 

Directions: 

Cut off the ends of your zucchini and twist through the spiralizer until the entire zucchini has been turned into zoodles. 

Raw Marinara

Ingredients:

  • 4 large tomatoes 
  • 1 cup chopped sundried tomatoes 
  • 1 garlic clove
  • 1 Tbsp. extra virgin olive oil 
  • Small bunch fresh basil 
  • Salt & pepper to taste 

Directions: 

Pulse in your blender/food processor until your desired consistency.

Raw Pesto

Ingredients:

  • 1/2 cup pine nuts
  • 1 Tbsp. extra virgin olive oil 
  • Small bunch fresh basil 
  • Handful fresh parsley 
  • 1 clove garlic 
  • 1 Tbsp. water
  • 1 Tbsp. hemp seeds
  • 1 tsp. lemon juice
  • Salt & pepper to taste 

Directions: 

Pulse in your blender/food processor until your desired consistency

Cashew Alfredo 

Ingredients:

  • 1 cup raw cashews
  • 1 ½ cups water
  • 1 clove garlic
  • 1 tsp. lemon juice
  • Salt & pepper to taste 
  • Optional: ½ tablespoon nutritional yeast (for a "cheesier" flavor. Skip this if you're on a juice cleanse.)

Directions: 

Blend until smooth and creamy.
